肉及肉制品掺假是当前世界各国普遍关注的热点问题,肉制品掺假鉴别及定量检测技术的研究日渐成为食品安全领域的研究热点。本文简述了常见肉制品掺假形式,针对成分替代这种最常见的掺假形式,综合阐述蛋白质检测、核酸检测、红外光谱及电子鼻等多种肉制品掺假鉴别检测技术,以及基于核酸定量的肉制品掺假定量检测技术,并对各种技术的优缺点进行了分析和讨论。
