摘要:

母乳是对婴儿生长发育最理想的营养形式。母乳中的蛋白质具有复杂而多样的生物活性。完整的母乳蛋白经过蛋白酶的水解后以多肽形式发挥着重要生物学功能,包括抗菌和免疫调节活性,这可能有助于婴儿抵抗病原体的侵袭、建立正常肠道菌群。因此探究母乳中蛋白酶的种类及活性、母乳中活性肽及游离氨基酸的含量及功能有助于更深入地了解母乳对婴儿的有益作用。本文对母乳中蛋白酶、母乳及配方粉中活性肽及游离氨基酸等成分进行综述。
