食物血糖生成指数(glycemic index, GI)反映食物进入人体后血糖应答波动的情况,是食物碳水化合物质量的重要参数。本文综述了GI的测定方法,探讨了GI检测的影响因素,对比了国内外测定GI的标准方法,并对我国GI检测标准方法的基本情况和GI数据库进行了简要介绍。
