食品污染是影响食品安全的主要问题,一种食品是否安全,取决于其原料的性质及生产加工和食用方法。食品在加工过程中由于加工材料或高温、油炸等条件会产生一些有毒有害物质,从而严重危害到食品的安全性。本文就食品生产加工中控制污染物的方法进行了综述,简述了通过选择适当的加工材料及改变烹饪方式、加热条件、pH值等控制污染物生成,或使用生物、化学、物理等方法降低污染物的研究现状。
