血糖生成指数表示含50g有价值的糖类食物和相当量的葡萄糖或白面包在一定时间内体内血糖应答水平百分值。它是一个生理学参数,是衡量食物引起餐后血糖反映的一项有效指标。它是人体实验的结果,比化学分析更能准确地反映食物对血糖的影响。血糖生成指数的高低受多方面因素影响,它与某些疾病的发生密切相关。本文概述了血糖生成指数的概念及其与糖尿病、肥胖、心血管疾病和癌症等发生关系的研究进展。
