目的了解中国市售生畜肉中常见食源性致病菌的污染状况。方法2014年在中国15个省(自治区、直辖市)采集生畜肉4308份,按照食品安全国家标准方法检测金黄色葡萄球菌、单核细胞增生李斯特菌和沙门菌。结果沙门菌检出率为7.50%(323/4308),猪肉检出率高于牛羊肉,血清型主要是德尔卑沙门菌和鼠伤寒沙门菌。单核细胞增生李斯特菌的检出率为8.84%(381/4308),超市和餐饮店的检出率高于农贸市场,冻畜肉和冷却畜肉的检出率高于鲜畜肉。金黄色葡萄球菌的检出率为12.21%(526/4308),94.30%(494/526)的阳性样品≤10~3CFU/g。3种致病菌在第二、三季度的检出率均高于第一、四季度。结论中国生畜肉中致病菌检出率较高,通过交叉污染导致食源性疾病的可能性较大,需加以重视。
