摘要:

酚类化合物是一类植物体内的次级代谢产物,具有促进健康、降低慢性病风险的作用。果蔬中的酚类化合物约占膳食总酚类化合物摄入量的2/3。蔬菜作为膳食主要组成,种类繁多,酚类化合物来源广泛;酚类化合物结构多不稳定,极易氧化对蔬菜中酚类化合物的提取分离与组分分析检测技术提出更高要求。本文对蔬菜中酚类化合物的提取分离、组分分析检测技术以及常见蔬菜中主要酚类化合物含量的研究进展进行综述,以期为酚类化合物的有效提取分析和蔬菜资源的开发利用提供参考。
