强化食品是WHO推荐的改善人群微量营养素缺乏的有效手段之一,大多数国家采取强制性强化和(或)自愿性强化的方式,并结合适宜的食品强化项目来提高人群微量营养素的摄入水平。欧洲、美洲、澳大利亚和中国等诸多研究已表明强化食品在提高各自人群的微量营养素摄入水平方面发挥了重要作用,但是目前尚缺乏针对国内外相关研究的全面系统的总结。为了明确强化食品对人群重点微量营养素的贡献率,为强化原则的修订和强化量的风险评估提供数据,本文就国内外强化食品的贡献率和改善作用的相关研究进行综述。
