对菜籽饼酱油进行了急性、亚慢性毒性试验,致突变和致畸试验。结果表明:菜籽饼酱油是一种毒性极小,没有致突变和致畸作用的调味品。
Abstract:The rapeseed meal's soy was made from rapeseed meal, which contained glucosinolate,phenolic acid,tannin and phytic acid.In this paper,the toxicity of rapeseed meal' s soy was studied.The studies included acute and subchronic toxicity tests,mutagenicity test and teratogenicity test.The results show that the rapeseed meal's soy is a seasoning with a mild toxicity,and without mutagenicity and teratogenicity.
