发酵食品是人们日常饮食的重要组成部分。近年来,越来越多的研究证实发酵食品有降低疾病风险、提高寿命和生活质量等健康作用。部分国家已经开始在膳食指南中引入发酵食品的推荐量。本文在归纳发酵食品概念和分类的基础上,重点分析了目前主要发酵食品中的微生物特征及其健康作用,以及各国膳食指南关于发酵食品的推荐情况,以期为发酵食品的研究提供参考。
